fermentation is carried out at increasing temperatures to ensure optimum polymerisation of tannins and colour extraction during on-skin maceration. Maturation takes place in stainless steel tanks where malolactic fermentation enhances the bouquet and the variety's famous softness.

| Tasting notes: |
limpid, deeply coloured with typical violet reflections. Vibrant fruitiness reminiscent of both Gamay and Merlot; clean, well-defined, and very drinkable; attractive balance of softness and acidity, well-supported by alcohol that gives it good length at the same time.
