Thou Bianc
The new Chardonnay from Piedmont

If it is true that traditions evolve, the recent spread of Chardonnay grape will soon create its own authentic tradition in Piedmont as well. DOC recognition is the first sign of an official blessing for a wine that will surprise you. Thou bianc (white tufa in Piedmontese dialect) is the fruit of two vineyards, one in the village of Neive in Langhe and one in Moncalvo in Monferrato, both in prime positions on chalky tufaceous soil.
Thou is a pure Chardonnay never been in wooden barrels during its vinification process.
Also available in magnum.

 
Grapes: 100% Chardonnay grapes from two vineyards, one in the Langhe and one in Monferrato.
   
Vinification: the grapes are fermented at controlled temperatures in stainless steel tanks. Maturation takes place in the same tanks on the lees continues in the bottle for four months.
   
Alcohol: 12.5 % vol
   
Label design: inspired by a floral motif on an 18th century plaster ceiling in a family farmhouse. A good example of rustic popular art common until the end of the last century in the Basso Monferrato region.
The bottle is a traditional Burgundy-shape made of heavy dark glass to protect the wine from ultra-violet rays.
   
Recommended with: any good food suitable to white wine, Chinese and oriental cuisine.
