MALVASIA DI CASTELNUOVO DON BOSCO D.O.C.

A rare aromatic grape grown in the north of the Province of Asti since the XV century. The Bava family has been producing this delicate wine for four generations and is considered the leading producer in Italy. From the same grape the family has developed a well known Sparkling Rosé, a Late Harvest " Malvaxia" (also suitable for sacramental use)and a limited production of Grappa di Malvasia.
Grapes: Malvasia di Schierano 100% ( the DOC rules allow a contribution of Freisa grape up to 15%).
Region: villages of Albugnano and Castelnuovo Don Bosco.
Vinification: soft pressing and fermentation at low temperature, to preserve the fragrance the grape is harvested in small cases during the day and pressed in the night.
Characteristics: cherry red in colour with natural petillant fountains.The aromatic flavour is immediate to the noose with a fragrant characteristic of wild roses. The taste is delicate sweet, and the fruitness is persistent and pleasant.
Degree of alcohol: 5,5 of developed alcohol, 10,5 % total (at least 2/5 of the total reducer sugar must not be developed)
Longevity: it keeps the original freshness for at least 18 months. Not to be aged.
Recommended with: drink it simply chilled at any time and, of course, with strawberries and cream and many other kinds of dessert.
