MALVASIA DI CASTELNUOVO DON BOSCO DOC ROSE' SPUMANTE

The base grape for this delicate sparkling wine is Malvasia di Schierano. A red-skinned, aromatic grape that grows in tiny bunches, it is grown in only a few communes in the northern parts of the province of Asti. The Bava family have worked with the vignerons of this area for over forty years to get the best results from this grape.Without ignoring the fact that this is an important wine at DOC level, it is equally true that it is a perfect ingredient for refreshing mixer drinks and elegant cocktails. A sparkling dessert wine with an attractive sweetness, it also appeals to those who say their wines should always be "dry" and those who are not natural wine drinkers at all. Rawberries and cream and many other kinds of dessert.
Grapes: Malvasia di Schierano 100%.
Production zone: the better balanced wines with the highest tipicity come from a small area. Ours come from the best Castelnuovo Don Bosco vineyards in Albugnano.
Vinification technique: the grapes are harvested in small containers and pressed and de-stalked immediately. They then undergo criomaceration for a few hours. This is the technique that transfers the most delicate and ephemeral aromatic qualities from the grapeskins into the must, while retaining maximum respect for the natural qualities of the grape. The must is then stored at low temperatures until it is made into sparkling wine with the addition of selected yeasts in temperature-controlled autoclaves.
Tasting notes: cherry red colour with bright reflections; intense bouquet, fresh and elegant with clear scent of dogroses; attractively sweet but well-balanced with a slight tannic content that balances out the sweetness and leads to a pleasing finish.
Keeping qualities: to be drunk young.
Alcohol: 7% Vol.
Serving: uncork and pour immediately at a temperature of 6-8°C in cool glasses.

N.B. The Malvasia Rosé‚ produced by Bava was first made as a sparkling wine at the end of the 1970s. There followed a real fashion for sweet aromatic rosé‚ sparkling wine in Italy, pre-dating the boom for the more famous Brachetto by several years.
