Our Thou Bianc was born over twenty years ago as a pure Chardonnay, created to pay tribute to the white soils of the Monferrato hills around Cocconato, with its elegance and freshness.
Monferrato has always been a land rich in personality and character, qualities it kept hidden for a long time. In recent years, however, it has revealed itself to the public as a terroir also well-suited to white grape varieties, as shown by the rediscovery of the southernmost hills, near the border with Liguria.
Curiosity has always been a driving force for us. The desire to explore, to learn, and to experiment with something new has always fascinated us. That’s why, a few years ago, we decided to plant new vines in our Cocconato vineyards to see what we might discover with Timorasso.
The results sparked our curiosity in the best possible way. And so, after a few harvests of learning, our Thou Bianc is now presented in a new interpretation with the 2024 vintage: Timorasso joins the blend, bringing with it structure, aging potential, and a vibrant, salty tension.
It’s a choice rooted in the land and driven by the desire to tell its story through its most authentic grapes.
Due to their differing ripening times, the grapes are harvested and vinified separately. We use only stainless steel, selected yeasts, and temperature control. The wines are gently veiled and carefully tended until the following spring.
In the glass, Thou Bianc retains its signature notes from previous vintages—orange blossom, acacia, linden, banana, and honey—now enriched with a new, almost saline energy and intriguing aromas that make this wine even more distinctive, curious, and true to its origins.
